Ingredients:
• ½ Red Cabbage
• ½ White Cabbage
• ½ Red Onion
• 5 Spring Onions
• 1 Large Carrot
• ½ Bunch Coriander
(for the dressing)
• 50g Honey or Maple Syrup(vg)
• 50g Sesame Oil
• 1 Lime Zest and Juice
• 25g Soy Sauce
• 2tbs Sesame Seeds
• 1 Garlic Clove (minced)
• 1 Red Chilli
• 1tsp Minced Ginger
Method:
1. Wash and finely Slice the white and red cabbage.
2. Wash and peel the carrot, then shred it into thin strips.
3. Finely slice your onion then add to the salad bowl.
4. Wash and roughly chop your coriander saving a few leaves to garnish the salad.
5. Wash your spring onions, slice them and add to the salad bowl.
6. Wash the chilli then cut it in half and remove the seeds.
7. Cut the chilli into thin strips then dice them.
8. In a mixing bowl add all the dressing ingredients, whisk until it all comes together and season with salt and pepper to taste.
9. Dress the slaw mixing it until everything is evenly coated in the dressing and add it to a serving bowl.
Top with a few coriander leaves and enjoy!
